Older Sémillons, while delightful on their own, can match more buttery sauces as well as the buttery, biscuitty richness of pastry.

It’s the dead yeast that gives it that lovely biscuitty flavour.

The cake was at the centre of every celebration, wedding, Christmas, birthday, saint’s day, festival and festivity; an association which has given it a higher social status than its biscuitty inferior, which survives to this day.
