Cornfloured

Smooth the icing over the top and down the side(s) of the cake with cornfloured hands (Fig. ii).

The gloopy lemon filling was never too sweet, never too cornfloured, and the top rose cloud-like, stepped, a breath of weightless meringue with that final, brittle brown top that a spoon had to crunch through before meeting the gooey middle and the smooth, tart lemon.

Take one section of dough out of freezer and roll out on a cornfloured board.
