Detartration

With grapes, there are two problems: colour extraction in red grapes, and detartration.

Detartration is of interest if potassium bitartrate is to be recovered.

Detartration by bulk storage is accomplished in one of two ways.

During fermentation approximately ten percent of the acids are lost due to metabolism, detartration or destruction.
