Fructanohydrolase

The fructans of the inulin series are hydrolyzed by fructanohydrolases which attack the P-(2, 1 )-fructofuranoside linkages at the nonreducing chain ends with the release of fructose.

These enzymes are designated as -2,1-β-D-fructan-fructanohydrolases (EC 3.2.1.7).

Two types of exoinulinases (2, 1-β-D-fructan fructanohydrolase EC 3.2.1.7) were later identified and purified from C. pannorum AHU 9700 (Xiao et al., 1989).
