Neatball

Cook 125g spaghetti for each serving and serve with meatless "neatball" sauce, sprinkled with parmesan and shredded fresh basil.

Then come the neatballs ($3), nuts and seeds packed into a sphere, made to resemble meatballs.

You can use this as your basic recipe for all kinds of veggie neatballs. Customize the flavor by adding your choice of spice blend, such as taco spices for Mexican or ras el hanout or harissa for North African. They are the perfect party food but also make a lovely addition to a weeknight pasta (see page 120).
