Perinaise

PERI MAYONNAISE / Combine good-quality mayonnaise with peri-peri sauce (see page 191) to taste, or use ready-made perinaise.

No doubt she had a laundry basket on her hip or was whisking a perinaise sauce, little Brady careening off the walls and wanting to be out on the waves with his brothers.

Serve with a sauce, such as tartar sauce, parsley sauce (see page 80), garlic mayo, lemon mayo, or perinaise or hot sauce. Some lemon wedges and a fresh side salad complete the look.
