Research on HCAs has made some people afraid to cook meat on a barbecue grill. On a grill, the meat heats over coals or a gas or open fire. But studies have found that adding spices to meat before cooking at high temperatures may reduce harmful chemicals. This can be done by preparing a marinade and placing it on the meat before cooking. Marinades usually contain spices and herbs added to vinegar, wine or oil. This liquid mixture also softens the meat.

I like to use a lemon marinade with chicken.

How much marinade you need depends on the amount of food to be marinated.

First, marinate the tofu. In a bowl, whisk the kecap manis, chilli sauce, and sesame oil together. Cut the tofu into strips about 1cm thick, mix gently (so it doesn't break) with the marinade and leave in the fridge for half an hour.

You could just use ordinary shop-bought kecap manis to marinade the meat, but making your own is easy, has a far more elegant fragrance and is, above all, such a great brag!
