From Spanish escabeche, from Andalusian Arabic اَلسُّكَّبَاج (assukkabáj), from Arabic اَلسِّكْبَاجَة (as-sikbāja), feminine of سِكْبَاج (sikbāj), from Middle Persian *sḵbʾk' (*sikbāg) (whence Persian سکبا (sekbâ)). Possibly related to ceviche. Doublet of sikbaj.
