From French narghilé, from Turkish nargile, from Persian نارگیله (nârgile) from نارگیل (nârgil, “coconut”), which used to be used to construct the bowl, likely ultimately from Sanskrit नारिकेल (nārikela, “coconut”), from a Dravidian language.
